1. Just different clothing and personality types is all that I can discern. Though you can play as a woman and they likely are weaker.

2. Nope. But you can change his hairstyle/color. And you can buy him/her new clothes just like you can with a Barbie doll.

3. Easy at first, frustrating later on due to the excessive wind, just like I pointed out.
